This week's tip

There is a certain comfort in consistency because it is predictable and easy to maintain once you get the hang of it.

Like having certain "go-to" recipes.  Muffin in a mug, salad, egg dishes, day of the week recipes/meals, certain veggies with certain meats, etc.  It makes grocery shopping easy just to have certain pantry staples on hand to make any number of meals.

Until....something happens to upset the apple cart and then you are scrambling about what to eat.  For example, last week:  it was wet, cold and rainy weather and I was having a couple of physical problems that were making any meal prep at all...very challenging.  I lived on nuts, cheese sticks, protein bars and it kind of sucked to be honest.

But there is always something to be grateful for, even when you are faced with just keeping your strength up to keep yourself functioning:


  • the amount and quality of "convenience" food has greatly improved in the past 10 years or so
  • God provides through others:  there was a dinner at church and there were exactly 2 things I could eat of foods that I currently allow myself.  Green beans made by one of the older ladies at church tasted like a gourmet delicacy to me after my week of "bad" food...I savored those green beans like nobody's business
  • a reminder that eating is somewhat mind over matter.  Not every meal has to be a "home run" but rather it can be "good enough" to nourish you and satisfy hunger.  We Americans are spoiled in our many food choices and access.
  • sometimes you will be faced with just doing the best that you can.  Life happens and be flexible.  Unfortunately, I'm one of those people who if they fall of the wagon...it takes a while to get back on.  But I'm trying to change that.
These were my lessons learned this past week.
