This week's ingredient and quickie recipe


This is one of my new favorites when I'm trying to get a meal on the table quickly.  Now you can make your own out of a head of cauliflower but sometimes convenience wins.

Now for the recipe:

Cheeseburger Rice Casserole

1 lb of hamburger browned and spiced
1 8 oz can of tomato sauce
1/4 cheese, your choice
1 cup of cauli-rice

Brown your hamburger and mix in your tomato sauce until heated.  Cook your cauli-rice in the microwave (I cook my husband brown rice).  Layer the hamburger, rice and cheese in a bowl.  Mix it up until the cheese melts and enjoy.  Note:  This dish warms up well too!  2 dishes for me and 2 dishes for my husband.  Dinner and a lunch for each of us.  Works for me!
