Sometimes, you just need cake! Enter muffin in a mug recipes. There is a basic recipe which adapts easily to whatever flavor you are craving:
Basic recipe:
1 tablespoon of almond flour
1 tablespoon of coconut flour
1 tablespoon of flaxseed
sweetner to taste
1 tablespoon of coconut oil
1 egg
1/4-1/2 teaspoon of baking soda
splash of extract of your choice
mix together in a mug and microwave 70-90 seconds on the high setting. I've also poured it into a waffle maker and cooked it that way.
Make this recipe enough and you get a feel for the consistency it needs to be. Now your flavor options!
Chocolate: add 1-2 teaspoons of cocoa powder, 1 tablespoon water, splash of chocolate extract
Pumpkin: up your flours by a smidge and add 1-2 tablespoons of canned pumpkin and pumpkin pie spice to taste.
Lemon: add lemon extract and/or lemon juice and some poppyseeds.
Maple: add maple and butter extract.
You can also do a savory version by substituting olive oil for the coconut oil and adding a couple of spoonfuls of grated parmesan and to taste: italian seasoning and garlic salt.
This is a very adaptable recipe that can be made to whatever your food dreams are. It gets made in my home several times a week.
