Your promised recipes using cottage cheese!

Simple Pancakes:

1 egg
1 TBSP cottage cheese
1 tsp psyllium husk

Mix and let batter sit for 10 minutes to let the psyllium husk to do its thang!  Melt real butter in a skillet and fry that baby up.  I like one big pancake.  It doesn't take long, about two minutes on each side.  I like almond butter and zero calorie syrup on mine.


Berry Whip

1/2 cup cottage cheese
1/4 cup frozen berries
sweetener to taste

Dump ingredients into a blender or food processor and mix until blended.  A light dessert that is fruity and delicious.
