A versatile ingredient

There is one ingredient that I use in a variety of recipes.  It gives smoothies an ice cream taste and texture.  It is a useful ingredient in low carb pancakes.  It can make a low carb fruit whip.  It also makes a nice side dish to round out a meal.

I'm fond of it because it brings back memories of my dad.  He used to eat it at supper to round out his meal...even when no one else wanted anything to do with it.  Now that I'm older, I enjoy it like he did.

What is this ingredient?  Cottage cheese!
