This week's recipe

When you go low carb/gluten free....what about pasta?  Especially when it was a foundation food in your previous S A D  (standard american diet)?

Well, I have a new go to for pasta...egg noodles.  Here is how I do it:

2 eggs
1 ounce cream cheese
salt, pepper, garlic powder and nutmeg to taste

mix in a blender.  pour into an 8 x 8 pan lined with non stick foil...sprayed with olive oil for good measure.  Bake at 350 degrees for 13-15 minutes.  Turn out of the pan.  Roll the sheet of pasta up and cut into desired width noodles.

I make 2 different sauces:

Alfredo:  1-2 tablespoons of heavy whipping cream, 1 ounce cream cheese, 1/4 cup parmesan cheese, 1 tablespoon butter.  Microwave for 30 seconds.  Stir.  Microwave for another 30 seconds.  Stir.  Add the pasta and mix until coated.

Cheese:  same but instead of parmesan cheese, do sharp cheddar cheese.

Try it and let me know what you think.  I like it very much and it satisfies the pasta craving for me!
