Donna's deluxe frittata:
1 TBSP butter
1 handful of spinach
2 eggs beaten
3 slices deli ham (uncured) diced
1/4 cup cheese of choice
6-8 spears of asparagus air fried
mushrooms to taste (I love them so lots!)
Cut your asparagus spears into bite size pieces. Mix with olive oil and mineral salt and then air fry for 5 minutes. In the meantime, over medium heat, melt your butter and wilt your spinach in your frying pan. Then pour your eggs over the top. Add your ham, asparagus, cheese and mushrooms turn your heat down to low and cook until the eggy concoction is set. Enjoy this hearty meal. Share with a pug if you want! With practice you will be eating this in 10 minutes or less! I eat this dish often and it is my most favorite way to eat eggs.

Easy peanut butter muffin:
1/4 cup natural peanut butter (no sugar or hydrogenated oil)
1 egg
1/4 tsp baking powder
liquid stevia to taste (not necessary but use if you want to lessen the eggy taste)
mix in medium size ramekin or oversized mug and microwave for 90 seconds. I do this when I need a cake or peanut butter fix!
