A new to me vegetable
What is this vegetable you ask? It is a daikon radish? What the heck do you do with it? Well, I'm just learning about it.
As a person who is trying to reverse her Type 2 diabetes, I no longer eat potatoes. No baked, mashed, cheesy or french fried potatoes. I miss them. But I may have found a substitute in this vegetable pictured above.
Here is a short introductory article about the daikon radish.
The glycemic index of a white potato is over 80. The daikon radish glycemic index is 32. On the numbers alone it is a no brainer!
