This week's recipe(s)

Leftover soups are my latest passion.  After last weekend, I had some leftovers I wanted to use up.

First soup up is healthy chicken "noodle"


The recipe is loosely this:  one chicken breast shredded, 1/4 cup shredded carrots, 1/3 cup green beans and 2 cups of chicken bone broth.  At this point, I split the recipe and added leftover rice to my husbands and 1/2 a spaghetti squash to mine.  We both enjoyed a very hearty bowl of soup.


I did a second leftover soup...even better than the one above and enjoyed a bowl everyday this week:


I added all the cooking liquid from a pot roast (approximately 2 cups).  Added to this was 1 cup shredded beef, 1/4 head of shredded cabbage, 1 zucchini zoodled, 1/4 cup carrot shredded and spices to taste.  Oh my goodness, the soup got better each day as the flavors melded.

I've never made up soup recipes before...now I can't wait for my next chance to attempt.
