Weekends are when I experiment. This week's winning meal is lasagna without the traditional carb heavy noodles. It is good right out of the oven, but it is even better after the flavors meld in the fridge for a couple of days. When you are cooking for 2 that means this recipe is good for 4 different meals!!!
This recipe was my inspiration! But of course, I tweaked it to better suit a picky eater's palate.
Used spices to flavor it up rather than onion, bell pepper, garlic and basil. I used salt, pepper, onion powder, garlic powder and italian seasoning. I also used a 16 oz container of ricotta cheese and it was just enough and I probably used another 1/2 cup of cheese because hey, my motto is "there is no such thing as too much cheese!"
It is awesome...Italian without all the heavy carb induced guilt!!!
