Motivating quote



Setbacks happen.  Health issues rise up and priorities have to shift for a bit.  That's where I am at right now.  Time to regroup and set a date to try again.  There will be a break on this blog until after Labor day.

Muffin in a mug variation



I made a new one just this morning.  Here are the ingredients for one waffle:

1 TBSP almond flour
1 TBSP flax seed
1 TBSP coconut flour
1/2 TBSP cocoa powder
1 tsp cinnamon
1 TBSP sweetener of choice
1 TBSP coconut oil
1 TBSP water

Mix ingredients and bake on a waffle iron or in a mug in the microwave (80-90seconds).  Spread a frosting on top of 1 TBSP cream cheese, 1 TBSP butter and sweetener on top.

A delicious breakfast to start your day.

Note:  I forgot to take a picture before I scarfed it down.  The picture above is pretty close but without the frosting.

Learn from my mistake




I over-consumed sugary drinks daily for decades because of the pleasure it afforded (Click on the link for an article).  I should have practiced moderation instead, as in once or twice a month versus several a day.  I implore you, don't make the same stupid mistake I did.  Good health is a lifetime reward.

Finally,



Olive Garden has zoodles!!!  So excited!!!  I have had to be annoying and special order sauces over broccoli for the past year and a half (although the servers are very accommodating, it seemed weird to them, I could tell).

Today, I had grilled chicken parmigiana with a side salad and marinara over zoodles.  Lots of veggies in!  Absolute perfection!

Try this



Take some of this broccoli slaw and mix with mayo, apple cider vinegar and sweetner.  I just eyeball the amounts.  Once you have your slaw evenly coated, mix with shredded bbq meat of your choice (like pulled pork).  Very yummy!!!  Had it twice for lunch this week!
